Blackberry Lime Shrub
This is one of those secret-weapon recipes that makes you look like a very fancy host with very little effort. A shrub is a fruit and vinegar syrup that’s bright, tangy, slightly sweet, and incredibly refreshing. The best part? You make it ahead, keep it in the fridge, and instant cocktails are ready whenever friends stop by.
For the Shrub Syrup
1 pint blackberries
Zest of 2 limes
1 cup sugar
1 cup apple cider vinegar
For the Cocktail
2 oz blackberry lime shrub syrup
1 oz vodka
Seltzer water (optional)
Ice
Rosemary sprig or blackberries for garnish (optional)
Make the Shrub Syrup
In a saucepan, combine blackberries, lime zest, and sugar.
Cook over medium heat for 15–20 minutes, stirring occasionally, until the berries break down and the mixture becomes syrupy.
Add apple cider vinegar and bring to a boil.
Remove from heat and strain into a pitcher, pressing on the solids to extract all the liquid.
Pour the strained syrup into a glass jar and refrigerate for at least 24 hours before using. The syrup will keep in the refrigerator for up to 6 weeks.
Make the Cocktail
Fill a cocktail shaker with ice.
Add 2 oz shrub syrup and 1 oz vodka.
Shake vigorously for about 15 seconds.
Strain into a rocks glass over fresh ice.
Top with seltzer water if you’d like a lighter, sparkling version.
Garnish with a sprig of rosemary and a few blackberries.
Make a batch of the shrub a few days before a party and keep it in a labeled jar in the fridge. When guests arrive, all you have to do is shake, pour, and top with bubbles. You can even set up a DIY Shrub Bar with vodka, gin, and sparkling water so guests can build their own drinks — which means less time playing bartender and more time enjoying your party.
