Blueberry Orange Muffins
Bursting with juicy blueberries and zesty orange flavor, these muffins are a delightful balance of sweet and citrusy. Perfectly moist and fluffy, they make a refreshing treat for brunch or with afternoon tea.
Ingredients
2 cups flour
1 tablespoon of baking powder
1/2 teaspoon of salt
3/4 cup of sugar
1 egg lightly beaten
1 cup of milk
1/4 of butter or half a stick melted
1 teaspoon of vanilla
1/2 navel orange thinly sliced
1 cup of blueberries

Instructions:
Preheat the oven to 375 degrees. Grease and flour muffin pan.
Prepare the batter: Reserve 1/4 cup of flour and mix dry ingredients in a bowl. Mix wet ingredients in a small pitcher.
Coat the fruit: place reserved flour in a bowl with blueberries and coat them. Chop the sliced orange and place in the same bowl with the blueberries and lightly mix - you don't want all of the flour absorbed.
Combine: whisk the wet ingredients with the dry until the flour is dampened - the batter should not be smooth. Fold in fruit mixture. Using an ice cream scoop, place batter in each muffin tin. Top each muffin with Sugar in the Raw - don't be stingy, as you want a nice crunch on the top of the muffin!
Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
Serve warm from the oven, or make ahead and store in an airtight container at room temperature to serve the next day. Their tender crumb and fragrant aroma make them an irresistible choice for any time of day. Enjoy!
