Simple Roasted Zucchini

When zucchini is at its peak, sometimes the simplest preparation is the best. Roasting brings out its natural sweetness while a touch of butter or olive oil helps it caramelize beautifully. With just a few pantry staples—salt, pepper, and a hot oven—you can turn humble zucchini into a delicious side dish that pairs effortlessly with almost any main course.

Ingredients:

  • 2 medium zucchini

  • 1–2 tablespoons melted butter or extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 375°F.

  2. Prepare the zucchini: Trim the ends and slice the zucchini in half length-wise. Carefully cut the interior of the zucchini in a cross-hatch pattern.

  3. Season: Place the zucchini on the baking sheet or shallow baking pan, cut-side up. Spread the melted butter over the surface of each or drizzle with olive oil. Sprinkle generously with salt and pepper.

  4. Roast: Bake for 15-20 minutes until the zucchini is tender and lightly browned on the edges.

  5. Serve: Enjoy immediately as a simple side dish.

Roasted zucchini can be finished with a sprinkle of Parmesan, fresh herbs, or a drizzle of lemon juice. They’re a reminder that fresh, seasonal ingredients often need little more than heat and care to shine.
