Simple Roasted Zucchini
When zucchini is at its peak, sometimes the simplest preparation is the best. Roasting brings out its natural sweetness while a touch of butter or olive oil helps it caramelize beautifully. With just a few pantry staples—salt, pepper, and a hot oven—you can turn humble zucchini into a delicious side dish that pairs effortlessly with almost any main course.
Ingredients:
2 medium zucchini
1–2 tablespoons melted butter or extra virgin olive oil
Salt and freshly ground black pepper, to taste
Instructions:
Preheat the oven to 375°F.
Prepare the zucchini: Trim the ends and slice the zucchini in half length-wise. Carefully cut the interior of the zucchini in a cross-hatch pattern.
Season: Place the zucchini on the baking sheet or shallow baking pan, cut-side up. Spread the melted butter over the surface of each or drizzle with olive oil. Sprinkle generously with salt and pepper.
Roast: Bake for 15-20 minutes until the zucchini is tender and lightly browned on the edges.
