Repurposing Leftovers: 5 Ways to Use All That Easter Ham
Easter brunch is one of those meals where we always make a little too much. A bigger ham than we needed, extra potatoes, too many rolls, a half tray of roasted vegetables, and just enough dessert to feel like we shouldn’t throw it away. The good news is that Easter leftovers are some of the easiest to repurpose into entirely new meals that don’t feel like leftovers at all.
If you’re cooking in a small kitchen but still love to entertain, this is where creativity really shines. With a little planning, one Easter brunch can turn into two or three completely different meals over the next few days.
Below are some of my favorite ways to repurpose Easter brunch leftovers, with extra attention to what to do with leftover ham … because somehow there is always leftover ham.
First: Store Leftovers Like an Entertainer
Before you even think about new meals, set yourself up for success:
Dice leftover ham and store in small containers or zip bags.
Slice ham separately for sandwiches.
Think of leftovers as ingredients, not reheats.
5 Tried-and-True Leftover Ham Spin-Off Ideas
1. My Scalloped Potatoes with Ham is purpose-built for this type of cooking.
2. Ham, Potato & Onion Skillet
This “no recipe” recipe is one of the best “day after” meals.
Chop leftover scalloped potatoes or roasted potatoes
Add diced ham
Add sliced onions
Crisp everything in a skillet
Top with a fried egg
Serve it in the skillet at the table — casual, cozy, and perfect for any meal with friends or family.
3. Ham & Cheese Sliders are great if you’re hosting a post-holiday gathering and need something quick and flavorful.
Layer on a sheet tray:
Slider rolls spread with dijon mustard
Sliced ham
Grated Swiss or Gruyère
Brush tops of rolls with melted butter
Bake at 350 degrees until melty and golden
Cut and serve on a board — instant crowd food.
4.Make this quick Spring Ham Pasta and your guests will never know you are repurposing leftovers.
Cook and drain 1 pound of bowtie pasta, then toss with:
1/2 cup diced ham
1/2 cup peas (thawed first if using frozen)
1 Tbsp of lemon zest
1 cup of cream
1/2 cup of grated parmesan
Cracked black pepper
Feel free to add a bit more cream, depending on how heavily you like your pasta sauced. And remember: you can never add too much cheese.
5. My Butternut Squash Breakfast Bake pairs beautifully with diced ham. Simply add it in with the roasted butternut squash and you’ve got brunch all over again.
Final Thought
The best hosts know that a great meal can stretch into the next day, the next gathering, and the next memory around the table. So when you’re packing up Easter leftovers this year, don’t think of them as the end of the party. Think of them as the beginning of the next meal.
