Raspberry Crumble Bars
These Raspberry Crumble Bars are the perfect blend of sweet, buttery, and crunchy — a nostalgic treat with a wholesome twist. Featuring a rich, buttery shortbread base, a generous layer of raspberry jam (or any of your favorite jams or preserves), and a golden crumb topping with almond-studded granola, these bars are as easy to make as they are irresistible.
Ingredients:
1 jar (about 12 oz) raspberry jam
2 sticks (1 cup) unsalted butter, softened
3/4 cup sugar
1 teaspoon vanilla extract
2 1/3 cups all-purpose flour
1/2 teaspoon kosher salt
2/3 cup granola (without dried fruit, preferably with almonds)
Instructions:
Preheat the oven to 350°F (175°C). Line an 8x8 or 9x9-inch baking pan with parchment paper, leaving a bit of overhang for easy removal.
Make the dough:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 2–3 minutes).
Mix in the vanilla extract.
Add the flour and kosher salt. Mix until a crumbly dough forms. It should hold together when squeezed but still be crumbly.
Create the base:
Press about 2/3 of the dough into the bottom of the prepared pan to form an even layer. Use your hands or the bottom of a measuring cup to press it down firmly.
Add the jam:
Spread the raspberry jam evenly over the crust.
Make the crumble topping:
To the remaining 1/3 of the dough, add the granola and mix to combine.
Crumble this mixture evenly over the top of the jam layer.
Bake:
Bake for 35–40 minutes, or until the top is lightly golden and the jam is bubbling slightly around the edges.
Cool and serve:
Let the bars cool completely in the pan. Then lift them out using the parchment overhang and cut into squares.
Tips:
Chill the bars before cutting for cleaner edges.
If your granola has large clusters, give it a light crush before mixing it in.
