A sparkling blend of botanical gin, bright lemon juice, and just the right touch of sweetness, it’s topped off with bubbly Prosecco or Champagne for a celebratory twist, ideal for brunches, garden parties, or any occasion that calls for a toast.

Ingredients:

  • 2 cups gin

  • 1 cup freshly squeezed lemon juice (about 4–5 lemons)

  • 3/4 cup simple syrup (1:1 sugar to water)

  • Dash of orange bitters

  • 1 bottle (750 ml) chilled Prosecco or Champagne

  • Ice (If using a punch bowl, make a decorative ice block using oranges and lemons)

  • Lemon wheels or twists, for garnish

Instructions:

  1. Chill a large pitcher ahead of time if possible.

  2. Make the base:

    • In the pitcher, combine the gin, lemon juice, simple syrup, and a dash of orange bitters. Stir well to mix. Tip: This can be made ahead of time to ensure an extra chilled drink.

  3. Add the bubbles:

    • Fill individual champagne flutes or glasses with the cocktail mixture and top with Prosecco or Champagne.

    • If serving in a punch format slowly pour in the chilled Prosecco or Champagne over the base and decorative ice. Stir gently to combine, preserving the fizz.

  4. Serve:

    • Garnish each glass with a lemon wheel or twist.
