Honey Banana Tea Bread

Like Ina Garten is the inspiration for some of my recipes, so is Mary Berry—with this honey banana tea bread. Lightly sweet and wonderfully moist, it feels right at home on a cozy tea tray or shared at brunch. The use of local honey adds a rich floral note that complements the ripe bananas beautifully, creating a nostalgic, comforting bake with just the right touch of elegance.  

Ingredients: 

  • 1 cup of all purpose flour plus two teaspoons of baking powder and a pinch of kosher salt. 

  • 1/4 teaspoon grated nutmeg 

  • 1 stick of butter softened 

  • 2 bananas mashed 

  • 1/2 cup of sugar 

  • grated rind of 1 lemon 

  • 2 large eggs 

  • 6 tablespoons thick honey

Instructions:

  1. Preheat the oven to 325 degrees (300 degrees if using a convection oven). 

  2. Prepare the baking pan by lightly greasing, flouring, and lining a loaf pan with parchment paper. 

  3. Prepare the batter:

    • Measure the flour, baking powder, salt and nutmeg into a bowl and stir to combine. 

    • Peel and mash the bananas in a separate bowl.  

    • In a stand mixer cream butter and sugar until light and fluffy - like making a cake. 

    • Add lemon zest and eggs until combined on low speed.  

    • Add flour mixture alternately with honey and mix until thoroughly combined, then turn into the prepared pan. 

  4. Bake in the preheated oven for 1 and 1/4 hours or until a toothpick inserted into the center comes out clean. 

Whether served plain, toasted, or with a swipe of cream cheese, this tea bread is a quiet little showstopper. It's the kind of recipe you'll want to keep on hand for both everyday moments and special occasions alike. Enjoy!
