Turkey Tea Sandwiches

Ingredients:

  • 1 loaf sliced English raisin bread

  • 2 (8-ounce) packages cream cheese, softened

  • 1 bunch fresh basil, leaves removed

  • 2 scallions, white and green parts, finely chopped

  • 8–10 slices deli smoked turkey

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Make the cream cheese spread: in a medium bowl or stand mixer, combine the softened cream cheese and scallions. Mix until well blended. Season with salt and pepper to taste.

  2. Assemble the sandwiches:

    • Using an assembly line method, spread cream cheese mixture on each slice of bread.

    • Top half the slices with a layer of smoked turkey and a few fresh basil leaves.

    • Place the remaining slices on top to form sandwiches and gently press down to marry both halves of the sandwiches.

      Cover the sandwiches with damp paper towels and the entire baking sheet with plastic wrap. Refrigerate for at least two hours and up to six.
